Agreed - cheddar is excellent if done well (I'm partial to Cheddar cave matured). But, there is no way you can say you like cheese if you dislike Stilton (or blue cheese or gorgonzola). Stilton and port is the thinking mans version of cheddar and onion.

Cheddar is like noobs on a server. Easy to handle, available in plentiful supply, much better when matured a bit.

Stilton is like Festers. Blue, possibly a bit smelly, but full of many different flavours - excellent when mixed with alcohol and smoking products.

Literally that. Pay a trip to cheddar gorge and visit the caves. They have a load of shelves in there in which they mature the cheese. You can then purchase it in the various shops in Cheddar. It's smooth, refined and flavoursome - just like you Bosco!
